Shev Bhaji - Shev tomato bhaji

Shev bhaji is Khandeshi specialty. There are variants like Shev Bhaji in onion-coconut gravy, Shev bhaji in curds based gravy and the one I am going to write Shev Bhaji in tomato based gravy.
Whatever it may be, Shev Bhaji as such not a dish for health conscious as it contains lot of oil and spicy too.

Ingredients:
1. 1 medium sized onion finely chopped
2. 2 tomato finely chopped
3. 1 tbsp ginger-garlic paste
4. 1-1/2 cup Bhaji Shev
5. 2 tsp red chilli powder
6. 1 tsp turmeric powder
7. 1 tsp garam masala
8. 2 tsp kala masala (If not available, increase Garam masala quantity to 2 tsp)
9. 3-4 tbsp oil
10. 1/2 tsp jeera
11. pinch of hing
12. Salt as per taste

Preparation:
1. Heat oil in a pan/kadhai, add hing and jeera
2. Add chopped onion and fry till golden brown
3. Add tomato and cook till soft. Add ginger-garlic paste(add at this stage only and not earlier as it will give a string flavor to the gravy if added at this stage)
4. Add turmeric powder, red chilli powder, garam masala, kala masala and fry well, till the mix starts leaving oil from all sides
5. Add water to adjust consistency. Add salt and bring to boil on slow flame
6. Add 1/2 cup of Shev at this point and off the flame
7. Add remaining Shev only in individual serving. This way you can maintain the crunchy and soft Shev(as we added 1/2 cup in gravy) both well in servings
8. Serve hot with Pulka, Bhakari or rice

Missi Roti

A newly discovered favorite!! What else can I say about this healthy meal option..
So straight to recipe :-)




Ingredients:
1. 1 cup whole wheat flour
2. 1 cup gram flour (Besan)
3. 2 tbsp kasuri Methi 
4. 1 tsp carom seeds
5. 1 tbsp red chili powder 
6. 1/2 tbsp turmeric powder
7. 1 tbsp ginger-green chilli paste
8. Salt for taste 
9. Oil for cooking 
10. Water for kneading 

Preparation:
1. Mix all ingredients (except oil and water) in a big size bowl
2. Knead into soft dough using water as required  
3. Apply little oil to the dough and knead again
4. Divide the dough in to equal size portions and roll into flat circle
5. Heat tawa (flat pan/dosa tawa) and place the rolled Missi roti on it
6. Once it starts sowing bubbles, turn the side 
7. Apply little oil on both sides and cook till golden brown 

Serve hot with Mango pickle and curds

Apple and Pear Crunchy Salad

I am experiencing super hot summer in my visit to my home town which is in northern part of Maharashtra. Temperatures sour to 44-45 degrees in  noon time and you hardly feel like eating the full meal.
This salad is a sure combination to satisfy thrust and filling too.
What's more- it's healthy, quick and no oil!! So try out this and sure share your variations :) also

Ingredients:
1 Big size Apple
1 Pear
1 Orange
1 tbsp flaxseed
3-4 mint leaves
1/2 tbsp lemon juice
pinch of salt
pinch of black pepper powder

How to proceed:
- Cut Apple and pear in dice
- Peal orange and separate chunks
- Finely chop mint leaves
- Mix apple, pear, orange, chopped mint leaves, flaxseeds in a bowl
- Add lemon juice, salt, pepper powder and toss the salad
Cool for 5-10 minutes if desired
Yummy, crunchy salad is ready!!!
