Mini Rava Uttapa - Lunch box series recipe#6

Mini Rava Uttapa is easy and instant preparation which can be had for breakfast or taken in lunch box..anyhow kids are going to love it and you will have fun making it!!

Ingredients:
1. 1-1/2 cup Suji rava
2. 3 tbsp maida
3. 1/2 cup sour curds
4. 1/2 tbsp jeer
5. Salt to taste
6. Water as needed
7. 3-4 tbsp oil
8. 1 medium carrot, finely grated
9. Small piece of beetroot, finely grated
10. 2 tbsp finely chopped coriander
11. 1 tbsp finely chopped green chlli (optional)
12. 1/2 eno fruit salt


Preparation:
1. Mix suji rava, maida, salt, jeera, curds and green chilli if using, in a bowl.
2. Add water and make batter of pouring consistency. Don't make too thin.
3. Add eno and again mix well.
4. Keep aside for 15 mins
5. Heat tava and grease with oil.
6. With a help of ladle, pour the uttapa batter in a small circle. Do not spread.
7. Maintain low flame. Spread grated carrot, beetroot, chopped coriander as desired while uttapa is yet to cook.
8. Gently turn around. Apply oil as needed. Cook on both sides
Serve with chutney of your choice.

Cucumber Mint Cooler



Ingredients:
1. 1 medium size cucumber
2. Handful of fresh mint leaves
3. 1/2 tsp black salt
4. 1 tbsp lemon juice
5. 1 tbsp honey
6. 1/2 inch piece of ginger
7. Few ice cubes
8. 1-1/2 glass cold water

Preparation:
1. Peel and chop cucumber, finely chop mint and ginger
2. Add cucumber, mint, ginger, back salt to juicer jar
3. Add 1-1/2 glass of water, run the juicer, till all ingredients blend well
4. Add lemon juice and honey and mix well with help of a spoon 
5. Serve chilled with ice cubes
 Your refreshing, healthy summer cooler is ready!!
