Do you want to go beyond using microgreens just in your salads?

Then you are at right place! I experiment with my microgreens in many forms. We all know by now that microgreens are packed of nutrients and are mostly easy to grow super food!

If you are new to microgreens, Mustard (Rai) microgreens are the easiest to grow and seeds you already have in your pantry. And even if you are seasoned gardener, you will agree with me that these are the most easy and most beautiful microgreens to grow!

One of my favorite way to incorporating microgreens is to add them to my Daal (lentil curry). And trust me these mustard microgreens take the daal to next level with their unique aroma!

Easy microgreen Indian recipe


To make the Mustard Microgreens Daal you will need:

1. Handful of freshly harvested mustard microgreens. I have a few small trays where I usually rotate my different microgreens

2.  1.5 bowl cooked Toor (pigeon pea) daal [Pressure cook toor daal before hand without adding any spices]

3. 1/2 tbsp mustard (rai) seeds for tampering

4. 1-2 garlic cloves, finally chopped (optional)

5. 1 tbsp red chilli powder

6. 1/2 tbsp garam masala

7. 1/2 tbsp turmeric powder

8. 1/4 tsp hing (asafetida) 

9. Salt to taste

10. 2-3 tbsp oil

I try to keep the spices minimum so that the microgreens taste is not suppressed in this this daal. You can adjust as per your liking.

How to make microgreen daal


How to make microgreen daal - Step by step recipe 

1. Clean your microgreens and remove any mudetc. Wash them thoroughly.  Then chop roughly.  Don't chop very fine to retain it's nutritional benefits 

2. In a pan heat oil and add rai

3. As rai crackles, add hing and add chopped garlic and fry till is is slightly brown

4. Add the microgreens and sauté gently.  Don't overcook 

5. Turn the flame to low and add turmeric powder, red chilli powder,  garam masala and fry all the masala well. Make sure not to burn it

6. Add cooked toor daal and adjust water to get desired consistency 

7. Add salt as per taste and let the daal boil well and turn off flame
