Sweet potato leaves bhaji/dry subji

 Continuing from my last post about Singapore local & Chinese greens, the another vegetable that I received was sweet potato leaves. If you haven't read my previous post, do check out to get how I ended up trying & making these veggies in Indian way.

Sweet potatoes has been part of our recipes for long, but never I have had the leafy  greens that of sweet potato. 

I had seen one of my neighbor grow sweet potato leaves while tending my kitchen garden but never tried myself how they grew or tasted them.

So now when my SG local veggies subscription had these sweet potato leaves I prepared this simple side dish


Herr are how these leaves look like



Ingredients

1. Sweet potato leaves

around 250gm

2. Two Medium-sized potatoes 

3. 3 tbsp Oil

4. 1 tbsp red chill powder 

5. 1/2 tbsp turmeric powder

6. 1/4 tbsp rai/mustard seeds

7. Salt to taste


Preperation:

1. Clean sweet potato leaves by removing hard stems. Take tender stems &

leaves. Wash well & chop finely.

2. Peel & cut potatoes in cubes

3. Heat oil in pan, add rai/ mustard seeds.


5. As it crackles add potatoes & sweet potatoes leaves





7. Cover & cook till potatoes are soft

8. Add turmeric powder, red chill powder & salt & mix well

9. Cook for another 1-2 mins till any extra water evaporates 

You can have this subji with daal-rice or roti as side dish.
