Cheesy Spinach Corn Bruschetta

             Cheesy Spinach Corn Bruschetta is a simple yet delicious snack that can be made in no time. It is a perfect way to add some greens to your diet without compromising on taste. Crispy bread topped with creamy spinach and sweet corn makes this dish ideal for evening snacks, kids’ tiffin or small get-togethers. Surprise element is you can make it without actual cheese 😀


Ingredients:

1. 1 cup sweet corn kernels

2. 1 bowl finely chopped spinach

3. 1–2 garlic cloves, finely chopped

4. ½ tsp chilli flakes (as per taste)

5. 1 tsp mixed herbs or oregano

6. 2–3 tbsp butter or any flavor less cooking oil

7. ½ cup milk

8. 2 tbsp all purpose flour/Maida/Wheat flour

9. Couple of cubes grated processed cheese 

10. Salt to taste

11. Bruschetta bread or regular bread slices


Preparation:

1. Heat butter or oil in a pan on medium flame.

2. Add finely chopped garlic and sauté till it turns slightly brown


3. Add chopped spinach and sauté till  it changes colour.


4. Add sweet corn kernels and mix well. You can use boiled kernels or fresh as well work same way.


5. Sprinkle 2 tbsp of maida/all purpose flour or wheat flour


6. Quickly add milk and keep stirring continuously so that no lumps are formed.

Add a little water if required to adjust the consistency.

7. Add salt to taste and cook till the mixture becomes slightly thick and the raw taste of milk goes away.

8. Switch off the flame. Add chilli flakes and mix well.


9. At this stage, you can also add 1–2 cubes of grated processed cheese.

I have not added cheese here, as we enjoy this mixture even without cheese.


10. Sprinkle mixed herbs or oregano and mix everything nicely.


For Assembling Bruschetta:

11. Apply garlic butter or ghee on bruschetta bread or bread slices and toast lightly.

12. Spread the prepared spinach corn mixture on top 

13. Garnish with some grated cheese  and bake in an oven or roast on a pan till the cheese melts.
