Those familiar to me know how much I advocate clean eating & consuming local produce. After moving in SG my efforts on consuming local grown produce has surely taken hit. I miss my terrace garden as I am still trying to master growing in tropical climate. Yet, what you keep thinking always, someway finds its way to you!!
So when my company mail popped up with subscription for localy grown, pesticides free greens direct from farmers, I jumped on the opportunity.
While most greens sent in this subscription are not Indian greens that we often cook in our household, I am open to experiment with new leafy greens!
So here I am today sharing one of this green received in this week subscription, called "Nai Bai" (my Marathi speaking friends can have some fun with name, like we did at home 😀)
Nai Bai is also known as Milk Cabbage, has milky white stems and dark green leaves. It offers a crisp and crunchy texture with a mild and slightly sweet flavour.
Nai Bai is more commonly used in Chinese stir-fries recipes.
I made simple garlic infused stir fry Nai bai to go as side dish with my simple lemon rice. Check out the detail recipe below, it is no rocket science, just 2 steps and done, you have yummy side dish!

Ingredients:
1. 1 packet of Nai bai- it was around 250 gm
2. 4-5 big cloves of garlic
3. 2 tbsp oil
4. 1 tsp chilli flakes
5. Salt to taste
Procedure:
1. Wash & finely chop nai bai. Discard the very bottom of white part which is hard & has small roots

2. Finely chop garlic
3. In a pan heat oil & add garlic to it, fry it till it slightly golden
4. Add chopped nai bai & cover & cook till it is soft or changes to dark green color
5. Open the lid & stir fry till all water evaporates. Add salt & mix well
6. Sprinkle chilli flakes
Tasty garlic infused stir fried nai bai is ready! I paired it with lemon rice but can go well with bread also.
You can also add coarsely ground roasted peanuts too at end to add crunh
